Pane e salute is a small, intimate osteria in Woodstock, VT. It’s renowned for inspired renditions of foods from all over Italy, created from (mostly) home-grown and/or local ingredients and paired with wines from all over Italy, including many varietals not represented on Italian restaurant wine lists. Caleb Barber and Deirdre Heekin own and run pane. When the restaurant is open, Caleb’s at the range and Deirdre is host and wine director. They’re well-known here in Vermont, across New England, and far beyond. Their last two dinners at The James Beard House in New York were sold out. This year’s a big year for Caleb and Deirdre. In June, Chelsea Green published Libation, Deirdre’s personal account of the development of her own nose and palate in appreciating unusual vintages, rare cocktails and digestifs, and In Late Winter We Ate Pears, a cookbook that pairs vignettes from the year that Caleb and Deirdre spent in Italy right after their marriage with recipes that they learned there. They’ll be in Chicago for three nights, reading and signing books and participating in three different events:
