A Taste of Vermont in Chicagoland

Caleb Barber and Deirdre Heekin, restaurateurs and authors from Woodstock, VT, will be reading & sharing their knowledge of Italian wine and food at three events in Chicago.

Pane e salute is a small, intimate osteria in Woodstock, VT. It’s renowned for inspired renditions of foods from all over Italy, created from (mostly) home-grown and/or local ingredients and paired with wines from all over Italy, including many varietals not represented on Italian restaurant wine lists.

Caleb Barber and Deirdre Heekin own and run pane. When the restaurant is open, Caleb’s at the range and Deirdre is host and wine director. They’re well-known here in Vermont, across New England, and far beyond. Their last two dinners at The James Beard House in New York were sold out.

This year’s a big year for Caleb and Deirdre. In June, Chelsea Green published Libation, Deirdre’s personal account of the development of her own nose and palate in appreciating unusual vintages, rare cocktails and digestifs, and In Late Winter We Ate Pears, a cookbook that pairs vignettes from the year that Caleb and Deirdre spent in Italy right after their marriage with recipes that they learned there.

They’ll be in Chicago for three nights, reading and signing books and participating in three different events:

On Monday, 22 June
Caleb and Deirdre will do a reading and book signing at In Fine Spirits, 5420 N. Clark Street, from 7:00-10:00 p.m. In Fine Spirits will offer a small menu of flatbreads and appetizers paired with with Italian and New World wines. $15 per person includes tax and gratuity and one drink ticket. On Tuesday, 23 June
Crofton on Wells, 535 North Wells, will feature a menu from In Late Winter We Ate Pears paired with wines selected by Deirdre. There will be a discussion and booksigning. Reservations for this winetasting and dinner are a must: call 312.755.1790 or visit OpenTable. The menu includes crostini with fava beans; risotto al limone; pollo arrosto concon fagiolili verde; escarole con olio e aceto; and panna cotta with fresh berries for $40 per person ($65 with a copy of Libation) plus wine and gratuity. [Crofton on Wells’ excellent regular menu will also be available.]

On Wednesday, 24 June
from 6:00-8:00 p.m., Caleb and Deirdre will do a booksigning and tasting of interesting Italian varietals at Lush Wine and Spirits, 1257 S. Halsted. For more information, call (312) 738-1900.
